THE CLASSIC BREW
With Milk
A traditional preparation designed to draw out the full strength, colour and body of the Assam CTC.
TEA
1 tsp (approximately 2.5–3 g) per cup
WATER & MILK
½ cup water + ½ cup milk
BREWING METHOD
01 — BEGIN WITH WATER
Bring the water to a full boil. Freshly crushed ginger or cardamom may be added according to preference.
02 — ADD THE TEA
Add the CTC tea to the boiling water along with sugar, if desired.
03 — ALLOW TO DEVELOP
Reduce the heat and simmer gently for 2–3 minutes, allowing the tea to release its depth, strength and rich colour.
04 — ADD MILK
Add the milk and allow the tea to come to 1–2 gentle boils, keeping the heat controlled.
05 — STRAIN & SERVE
Strain into a warmed cup and serve immediately.

THE PURE CUP
Without Milk
For a direct expression of the Assam CTC, without the addition of milk.
TEA
1 tsp (approximately 2.5–3 g) per cup
WATER
Freshly boiled water — approximately 100°C
INFUSION TIME
2–3 minutes
METHOD
Add the tea to freshly boiled water and allow it to infuse for 2–3 minutes. Strain gently and serve immediately.
SERVING
Best enjoyed without milk. Sugar may be added according to preference.
NOTE
CTC tea develops its strength quickly. Avoid prolonged boiling or infusion, as excessive extraction may overpower the balance of the cup.
